301 Adegheri "Le rune" Custoza - 2014 <b>Custoza “Le Rune”</b><br />A whisper, alchemy, the secret language of the world that you can see through this wine with unique characteristics. Obtained from different mostly aromatic grape varieties, this wine is unique in terms of its pleasantness, armony end versatily.<br /><br /><b>Vinification</b><br />The vinification process starts as soon as the grapes are brought to the cellar. After roller crushing, the next step is cold maceration on the skins, which aids the extraction of the bouquet and variety typification. The must thereby obtained undergoes heat-controlled fermentation (at about 16°C). It is then put into steel tanks until the bouquet has been completely cleaned. After a brief spell in the bottle, the wine is ready to be drunk.<br /><br /><b>Grape Varieties: </b><br />Garganega, Trebbiano Toscano, Friulano, Malvasia, Riesling Italico, Cortese, Chardonnay a completare.<br /><br /><b>Vineyard:</b> geographical position and characteristics<br />The vineyards are situated to the southeast of the Lake Garda moraine basin. The average age of the vineyards is about 30 years. The hilly morainal soil, calcareous and gravely-sandy, is ideal for these white grapes.<br /><br /><b>Systems:</b> Method and density<br />Guyot for about 5.000 vines/hectare and pergoletta veronese for 3500 vines/hectare.<br /><br /><b>Vintage:</b> time and method<br />The grapes are harvested in two stages, at the end of August and in the second half of September, depending on the varieties. 102 Col d'Orcia Rosso di Montalcino - 2011 Rosso di Montalcino <b>Montalcino</b> – Siena - Sant'Angelo hill overlooking the Orcia River, facing South-South/West and exposed to sun ray all day long. Average height 300 m above sea level.<br /><br /><b>Vinification:</b><br />Fermentation on grape skins for about 10 - 12 days at controlled temperature below 28° C in shallow, wide steel tanks (150 hl), in order to obtain delicate tannin and colour extraction.<br /><br /><b>Grapes:</b><br />Sangiovese, locally called "Brunello" (the same variety used in the production of Brunello di Montalcino).<br /><br /><b>Weather conditions:</b><br />The heavy spring rains and the high temperatures brought the growing season forward ten/fifteen days causing an early “veraison” in the second decade of July. Between late August and early September the temperatures were high. Early harvest of over a week, with very low yields but good quality of the grapes.<br /><br /><b>Ageing:</b> 12 months, some in French oak barriques, the rest in Slavonian oak casks between 25 and 75 hl, followed by refinement in bottle.<br /><br /><b>Colour:</b> Deep ruby red with violet hues.<br /><br /><b>Bouquet:</b> Vinous, ample and complex. The deep hints of ripe red fruits are perfectly balanced with the pleasant scents of the oak.<br /><br /><b>Flavour:</b><br />Full and balanced with soft and enveloping tannins.<br />Long and pleasantly fruity aftertaste. 15.95 ) In stock

It pairs well with fish appetizers, ham, grilled vegtables and vegtable lasagnas.<br /><br /><b>Vinification:</b><br />After hand picking the grapes soft pressing begins immediately. The must obtained from this pressing is fermented at a controlled temperature that helps bring out the best of the grape’s varietal characteristics. 603 Ricchi Meridiano - 2013 Meridiano After a short period of semi-drying and the correct period of aging in wooden oak barrels we obtain a straw yellow wine with shades of gold. The bouquet is intense and persistent, accentuated by the warm hints of mature exotic fruit, bananas and honey. It is full bodied and harmonious. It leaves a soft taste on the tongue due to the combination of polialcohol and alcohol. It also has an inviting freshness. It is perfect with pumpkin tortellini, a specialty of the Mantua area, white meat and fish.<br /><br /><b>Vinification:</b><br />The grapes are hand picked and put directly into wooden boxes. They are left briefly to semi dry in order to intensify the sugar content. After soft pressing, the must obtained is fermented at a strictly controlled temperature of 18° C. 606 Ricchi Ribo - 2012 Ribo Its garnet red in colour and has an initial red fruit bouquet that then leads to the stronger smells of tabacco and leather. It is full bodied and harmoniously balanced with elegant softness due to its aging in tonneaux. This is a wine to be drunk with heavier meat dishes, with game and with stronger cheeses.<br /><br /><b>Vinification:</b><br />The grapes, picked the last week of September and the first of October, after destemming undergo red vinification and are left to macerate for a relatively long period with frequent pumping over for the extraction of colour and the characteristic varietal smells. After racking it is left for one year in tonneaux and then 10 months in bottles which is fundamental for maturing properly.<br /><br /><b>Grape Varieties:</b> 25% Cabernet Sauvignon, 75% Cabernet Franc. 16.95 ) In stock

203 Tedeschi Lucchine - 2014 Lucchine <b>Lucchine</b> is the name of the vineyard that provides the grapes. It is located in the plains at the foot of Pedemonte hills in the heart of the historic Valpolicella Classica area. This vineyard, thanks to the unique winemaking process used with the grapes, yields a fresh and fruity Valpolicella Classico, ideal to enjoy throughout the meal.<br /><br /><b>Color:</b> strong ruby red. Clear and transparent.<br /><br /><b>Bouquet:</b> fresh and young with notes of cherries and red currant.<br /><br /><b>Flavor:</b> lively acidity, well balanced with its structure and alcohol content. The after taste confirms the notes in the bouquet. A young Valpolicella wine, pleasant and elegant. Suited for ageing: 2/3 years, even though it is a young and ready-to-enjoy wine.<br /><br /><b>Vineyard Notes</b><br />Soil: clay and limestone of alluvial origin, with a strong rock structure.<br />Vine density: 4000 vines per hectare.<br />Vineyard age: 25 years.<br />Cultivation: trent small bower.<br />Pruning: 14/18 buds/plant.<br />Production: 10000 kg/hectare.<br />Grape varieties: 25% Corvina, 25% Corvinone, 30% Rondinella, 10% Molinara, 10% Rossignola, Negrara, Dindarella.<br /><br />Winemaking Technique<br />Grape harvest: beginning of October.
